This is not really computational flui dynamics, but
here goes anyway.
My experience with the Dantec BSA (I assume this is the one
you're using) is with a circa 1990 model. One used to be
able to store and export a file containing, among other
things, the velocity of each individual validated Doppler
burst. If the manual tells how to do this, then you should be
able to search and find the largest and smallest numbers
in the listing.
